Method

  1. Preheat oven to 400°F (200°C). Pat chicken thighs dry, season with salt and pepper.
  2. Heat olive oil in a large oven-safe skillet (cast iron preferred, like this method). Sear chicken skin-side down until golden, about 5 minutes. Flip and cook another 3 minutes. Remove from the skillet.
  3. In the same pan, add garlic and ginger, and sauté 1 minute. Stir in cherry preserves, soy sauce, vinegar, and honey. Simmer until glossy, about 3–4 minutes.
  4. Return chicken to skillet, spooning glaze over pieces. Transfer pan to oven and roast 20–25 minutes, until chicken reaches 165°F internal temp.
  5. Remove, rest 5 minutes, and garnish with scallions and sesame seeds.
